A Brut Sparkling Cider with some residual sweetness.
This Cider was pressed from the 2013 apple harvest before a slow wild yeast fermentation began that winter. It was bottled whilst still fermenting then left for 18 months before being hand riddled and disgorged in 2015. I has been allowed to further age. No cultured yeasts were used in it's production giving a natural funk, full mouth feel and long satisfying finish
